Many of you have been
asking us about treating low BG (blood sugars) on Pesach/Passover. As far as we know there are no glucose
tablets that are certified kosher for Pesach---winkies and/or Rockets (which we
have been recommending for almost 20 years) are kitniyos and we do not know if
they have kosher certification for Pesach.
Our
recommendations:
Look for candies that
do not have a lot of ingredients after the sugar or glucose (that will slow
them down)

Marshmallows
v
Meringue cookies
v
Grape juice in small
amounts
v
Milk products are
great for raising BG
Most ready made
products for Pesach are very high in sugar--just important to watch the portion
sizes; it is easy to lose control.
We have talked about
sweeteners and have a chart in our book but since there seems to be a need for
clarification we will repeat it here
There are very few
sweeteners certified Kosher for Passover mostly because the dextrose is
kitniyos
Splenda in all forms
has a very good Kosher certification in
Israel but not for
Pesach. It is nice to know
that the liquid Splenda (0 calories and 0 carbs) is available with excellent
certification but not for Pesach
We recommend using a
combination of the few things available till you get to the taste that you
approve of.
Most recipes call for
too much sugar to begin with. In
all recipes you can cut down the amount of sugar called for using even less than
a third, and using only powdered sugar (since it is aerated you might get along
with less than regular sugar) then use the packets and liquid (available in
Israel ) or what ever you have available till you get the sweetness that you
like. Lemon juice in most recipes will help a
bit in covering up the after taste.
In addition to all the
wonderful recipes in EnLITENed Kosher Cooking there are many charts that are
helpful in getting started and keeping up a lifestyle of healthy eating,
including a chart (appendix 10 on page 396) with equivalent amounts of
sweeteners that can be very helpful as well.
